Abstract
This document specifies requirements for the design and construction of facilities in retail establishments and for the implementation of hygienic distribution of unpackaged food by way of self-service to the consumer. The document describes the specific forms of supply that are common for unpackaged food products, as well as the equipment and facilities that may be required. The document is intended to provide guidance to prevent adverse food impact that may foreseeably occur in the context of self-service distribution.
