Analysis of coffee and coffee products - Determination of chlorogenic acids content in roasted coffee and soluble coffee - HPLC method

Title (German)

Untersuchung von Kaffee und Kaffee-Erzeugnissen - Bestimmung des Gehaltes an Chlorogensäuren in Röstkaffee und Kaffee-Extrakt - HPLC-Verfahren

Overview

This standard specifies a method for the separate determination of the three mono-caffeoyl quinic acids 3-, 4- and 5-CQA, the three di-caffeoyl quinic acids 3,4-, 3,5- and 4,5-diCQA, of three feruloyl quinic acids (3-, 4- and 5-FQA) and two chloroacetic acid lactones (3- and 4-CQL). Examples of structural formulas, designations and the common abbreviations for determinable analytes are given in Figure A.1 and in Table A.1. This method has been validated for roasted coffee and coffee extracts in liquid and dried form. However, it is also suitable in principle for green coffee. This standard has been prepared by the DIN Standards Committee Food and Agricultural Products (NAL) at Working Committee NA 057-05-09 AA "Kaffee" ("Coffee") and tested in a comprehensive round robin test.
