DIN EN 12041
Food processing machinery - Moulders - Safety and hygiene requirements; German version EN 12041:2000+A1:2009

Title (German)

Nahrungsmittelmaschinen - Langwirkmaschinen - Sicherheits- und Hygieneanforderungen; Deutsche Fassung EN 12041:2000+A1:2009

Overview

This standard defines relevant requirements set out in Annex I of the new EC Machinery Directive 2006/42/EC, relating to machines which were placed on the European Economic Area (EEA) market for the first time, with the intent of simplifying the means of proving conformity with such requirements. Once this standard is designated a harmonized standard in the Official Journal of the European Communities, a manufacturer applying this standard may assume compliance with the requirements of the Machinery Directive (the so-called presumption of conformity). This standard applies to the design and manufacture of moulders of the types described in 3.1, 3.2 and 3.3 and illustrated in figures 3a, 3b and 3c. These moulders are used in the food industry and shops (bread making, pastry making, sweet industries, bakeries, confectioners, delicatessens, catering facilities, and so on) for flattening, rolling and elongating pieces of dough. Other designs of moulders and type 1 moulders designed for other than hand crafted products using soft dough, for example, French baguettes, are not covered by this standard. This standard covers the technical safety and hygiene requirements for the installation, adjustment, operation, cleaning and maintenance of these machines, as defined in 3.22 of EN ISO 12100-1:2003 and in the manufacturer's instruction handbook. The significant hazards covered by this standard are mechanical (drawing in, trapping, entanglement, crushing, loss of stability), electrical, ergonomic and also those resulting from inhalation of flour dust and lack of hygiene. Noise is not considered to be a significant hazard for the moulders. This does not mean that the manufacturer is absolved from taking measures to reduce noise and making a noise declaration. Therefore, a noise test code is included in Annex B. The following machines are excluded: experimental and testing machines under development by the manufacturer; domestic appliances; bagel machines. This standard applies only to machines manufactured after the date of approval of this standard by CEN. This standard contains the German version of EN 12041:2000+A1:2009 which has been prepared by Technical Committee ISO/TC 153 "Machinery intended for use with foodstuffs and feed" of the European Committee for Standardization (CEN). The following changes have been made with respect to DIN EN 12041:2000: a) The standard has been changed and adapted with respect to the new Machinery Directive 2006/42/EC; b) An informative Annex ZB on the relationship between this European Standard and the Essential Requirements of Machinery Directive 2006/42/EC has been added. The national interests during the preparation of the standard were represented by Committee NA 060-18-01 AA "Bäckereimaschinen" ("Bakery equipment") of Technical Section "Food Processing Machinery" of the Mechanical Engineering Standards Committee (NAM) at DIN. Representatives of the interested parties were involved in the preparation of this standard.
