Overview
The standard regulates the requirements for the ventilation equipment of sales arrangements that are open to the market or open to the public and in which predominantly unpackaged food is offered. In this type of outlet particular care shall be taken to ensure that the food is protected from all types of adverse influences (for example, microorganisms, odors, dust). The standard describes possible technical solutions for this as well as important decision criteria (such as food supply, locality, emissions at the location) as to whether ventilation measures are necessary at all and, if so, which ones. In this case, technical solutions for the planning, construction and implementation of ventilation systems are set out to ensure that conditions of spatial separation are achieved in such sales arrangements that comply with food hygiene regulations. These measures provide hygienically equivalent protection to a room enclosed on all sides. This standard has been prepared by Working Group NA 57-02-01-02 AA "Abtrennung von nicht allseitig geschlossenen Lebensmittelverkaufsstätten" ("Separation of non all over closed sales arrangements of foodstuffs") at NAL.
