Overview
The European Standard based on the national standard DIN 10531 and the Italian standard UNI 11460 specifies hygiene requirements which establish prerequisites for production of hot beverages, such as coffee and coffee specialities, tea, cocoa and dairy beverages from hot beverage appliances for commercial and household use in conformity with the food hygiene regulations and for placing on the market. Appliances for self-service are within the scope of this standard. For this purpose, this standard specifies general hygienic requirements for the construction, material and operation of the appliances concerned. It contains, in particular, requirements for hygienic and professional operation, for cleaning, disinfection and descaling as well as requirements for a migration test. This standard does not deal with any requirements relevant to work safety. This standard deals neither with electrical safety nor with performance requirements. DIN EN 60335-2-15 and DIN EN 60335-2-75 are used for commercially used appliances. Methods for measuring the performance of electric household coffee makers are provided in DIN EN 60661. The most important aim of this standard is consumer health protection. Tests by the official food monitoring authorities had shown that increased amounts of harmful substances, such as lead and nickel, can pass from the devices into the beverages. With the aid of the test methods specified in this standard, equipment manufacturers can carry out corresponding type tests on newly developed equipment, or equipment already in use can be tested to determine compliance with limit values for specific substance transfers from materials into the beverage, or to detect weak points in this respect in the selection of materials and the design. The standard is also a good instrument for official food monitoring to detect any hygiene deficiencies and to assess the extent to which the equipment meets the statutory hygiene requirements. In addition to equipment manufacturers and inspection authorities, the standard is also aimed at users, as special requirements are to be met especially during operation in order to comply with the applicable hygiene regulations (see Bibliography).
