Overview
Due to the revision of European hygiene regulations and the publication of the European regulation (EC) No. 852/2004 on the hygiene of foodstuffs, an adaptation to the modified legal situation has been made in standard DIN 10519. The modifications refer to the legal requirements for dispense of unpackaged food for self-service given in the introduction. Wrappers, packaging or protection of a similar nature will be used for avoidance of adverse effects, particularly when placing perishable foodstuffs for self-service on the market. For concretization of the legal provisions, DIN 10519 specifies requirements for planning and design of devices as well as for hygienic dispense of unpackaged foodstuffs for self-service to the end user. The types of presentation specific to these foodstuffs and the necessary devices and equipment, if applicable, are covered. The standard is intended to serve the avoidance of adverse effects on foodstuffs, including those that are predictable in the framework of dispense for self-service. It is applicable in food retailing as well as within the framework of food monitoring. The standard serves for orientation and is aimed at facilitating the adherence to perfect hygienic conditions during the handling of foodstuffs in order to ensure protection of the user against health hazards. The standard DIN 10519 has been prepared by Working Group NA 057-02-01-19 AK "Unverpackte Lebensmittel in Selbstbedienung" ("Unpackaged food for self-service") of Working Committee NA 057-02-01 AA "Lebensmittelhygiene" ("Food hygiene") at the Food and Agricultural Products Standards Committee (NAL).
