DIN EN ISO 11702
Animal and vegetable fats and oils - Enzymatic determination of total sterols content (ISO 11702:2009); German version EN ISO 11702:2009

Title (German)

Tierische und pflanzliche Fette und Öle - Enzymatische Bestimmung des Gesamtsterin-Gehaltes (ISO 11702:2009); Deutsche Fassung EN ISO 11702:2009

Overview

The International Standard permits the quantitative determination of the total sterols content by means of an enzymatic staining test. The method is applicable to free and esterified sterols in animal and vegetable fats and oils, fatty foods and related products. The determination requires sample quantities of 1 g and 2 g of fat. The method is not applicable to dark coloured fats and oils, for instance crude palm oil. The enzyme is not specific for cholesterol, but also oxidizes other 3-hydroxysterols. DIN collaborates with the European Committee for Standardization (CEN) via "Gemeinschaftsausschuss für die Analytik von Fetten, Ölen, Fettprodukten, verwandten Stoffen und Rohstoffen" (GA Fett) ("Joint Committee for the analysis of fats, oil, fat products, related substances and raw materials") of German Society for Fat Science (DGF) and of Food and Agricultural Products Standards Committee (NAL).
