Analysis of coffee and coffee products - Determination of furan and two isomeric methylfuran derivatives (2-methylfuran, 3-methylfuran)
Abstract
This document specifies a method for the determination of furan and two isomeric furan derivatives (2-methylfuran, 3-methylfuran) by gas chromatography with downstream mass selective detection in coffee and coffee products. It is based on an automated static headspace technique and quantification is performed using an external multipoint calibration method. Coffee products that fall within the scope of this method are extracts that have been spray-dried, agglomerated or freeze-dried. The method can also be used for coffee beverages produced in accordance with DIN 10792. The method has been tested for the following working areas, provided the device parameters and sample quantities described here are observed: Furan: 50 µg/kg to 4 500 µg/kg 2-methylfuran: 850 µg/kg to 21 800 µg/kg /150 µg/kg to 850 µg/kg restricted) 3-methylfuran: 7 µg/kg to 700 µg/kg
