Limits for wastegas heat losses of catering equipments

Abstract

This document is used for large kitchen appliances using gaseous fuels in accordance with 1. BlmSchV, § 3 paragraph 1, numbers 9 and 10. with indirectly heated cooking chambers (e.g. according to the series DIN EN 203-1 and DIN EN 203-2-x) such as ranges (see DIN 18851), Double jacketed boiling and quick boiling pans (see DIN 18855), deep fat fryers (see DIN 18856) and convection steamer (see DIN 18866). It shall also apply to convection ovens (see DIN 18866) if these are heated indirectly. This document specifies limit values for flue gas losses.
